I rolled the fillet in "fish-fry", which is seasoned flour and then seared it in an iron skillet with a little olive oil. Cover the skillet so the oil doesn't splatter around, and the fish cooks quicker that way too....careful you don't burn it, or you will have blackened fillet.....
I am gonna try trout...what to you cook it in, I now you use butter, which is verboughtem for me, so OL, what else do you use?
